Here's a simple idea: decorate your home, add anything that is red, cook up your favourite pasta, and treat yourselves to nutritious millet honey pancakes instead of a traditional cake.
Here's the easiest recipe for delectable pancakes:
Ingredients:
- 1 cup jowar flour
- 1/4 tsp salt
- 1 egg or 1 small ripe banana mashed
- ½ tsp Sri Lankan cinnamon powder
- 1 cup almond milk / coconut milk
- 2 tbsp organic jaggery powder
- 1 tbsp pure and unpasteurized honey
- 1 tbsp cold-pressed coconut oil or A2 ghee
- 2 tbsp pumpkin and sunflower seeds to garnish
Method:
- In a large bowl, whisk together the jowar flour, cinnamon powder, and salt.
- In another bowl, beat the egg/ripe mashed banana and then stir in the almond milk, jaggery powder, and cold-pressed coconut oil or A2 ghee.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a lightly greased skillet over medium heat.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip the pancakes and cook for another 1-2 minutes, until golden brown and cooked through.
- Serve the pancakes warm, drizzled with a few drops of honey.
- Garnish with pumpkin and sunflower seeds. If you have red cake sprinkles, don’t wait to use them on top.
