Guilt-Free Valentine's Day Cake Recipe

As much as you wish to create a special recipe this valentine’s day, we know you have your health concerns at the back of your head. Let’s face it, you secretly wish that cake could be healthier enough to not keep you bloated and guilty the next day. 

So, if you are planning to spread love beyond the usual romantic dinner, read through.  This Valentine's Day, whip up homemade Beetroot Cake for a bigger celebration. From show-stopping layers of nutritious ingredients to easy-to-decorate the top one, there's something for your taste and health.

Ingredients:

Method 

  1. Mix all the dry ingredients like sattu, oats flour, baking powder, baking soda, and salt. Sieve them.
  2. Preheat the oven.
  3. Separately mix unsalted butter/A2 ghee and coconut milk. Whisk well.
  4. Add vanilla essence, cardamom powder, mashed bananas, date puree, and beetroot powder and mix until even.
  5. Slowly mix the dry ingredients into the wet mixture.
  6. Once done, add a little coconut milk , chopped almonds and walnuts and adjust the consistency.
  7. Pour the mixture into the baking tray, sprinkle cacao nibs, and bake for 25 minutes at 180 degrees.
  8. Let it rest for 10 minutes before serving.

Power Tip:

If the cake sinks in the middle, there are chances that the tray used for baking was too small. Using more milk than the desired quantity also makes it sink. Be mindful of this.

Notes:

Apart from being rich in protein, sattu has generous proportions of iron, manganese, and magnesium. It is low in sodium. Adding oats flour provides fiber and other essential nutrients. Enjoy this special Valentine's Day treat!
