Ingredients:

½ cup pre-soaked amaranth seeds
1 cup pumpkin puree
2 cups almond milk
1 tsp cinnamon
1 tbsp organic jaggery powder (optional)
Toppings: sliced almonds and pistachios

Method:

  1. In a saucepan, combine pre-soaked amaranth seeds, pumpkin puree, almond milk, and cinnamon.
  2. Bring the mixture to a gentle boil, then reduce the heat to low, cover the saucepan, and let it simmer for 20-25 minutes, stirring occasionally.
  3. Once the amaranth is cooked and the mixture has thickened, stir in the organic jaggery powder if desired, and remove from heat.
  4. Divide the porridge into serving bowls.
  5. Top each bowl with a sprinkle of sliced almonds and pistachios.
