Total Time: 20 minutes

Serving: 4 Crepes

Ingredients:

For the Crepes:

1 cup gluten-free flour (such as amaranth or almond flour)

1/2 cup plant-based milk (such as almond, coconut, or oat milk)

2 teaspoons unsalted butter 

1 teaspoon vanilla extract

A pinch of salt

For the Filling:

1 cup dark chocolate peanut butter

1/2 cup sugar-free dark chocolate

1/4 cup chopped nuts (such as almonds, hazelnuts, or pistachios)

 Method:

  • In a large bowl, whisk together the flour and salt.
  • Gradually add the plant-based milk, whisking constantly to avoid lumps.
  • Add the unsalted butter and vanilla extract, and whisk until the batter is smooth and thin.
  • Let the batter rest for about 15-20 minutes. This helps the flour absorb the liquid and improves the texture of the crepes.
  • Heat a skillet or crepe pan over medium heat and lightly grease it with a few drops of A2 ghee.
  • Pour about 1/4 cup of the batter into the pan and swirl to spread it evenly.
  • Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden.    
  • Flip and cook for another 1-2 minutes on the other side.
  • Repeat with the remaining batter, stacking the cooked crepes on a plate.
  • In a pan, gently heat the sugar-free dark chocolate until it’s warm and spreadable.
  • Spread a thin layer of warm chocolate onto each crepe.
  • Add in a layer of peanut butter and chopped nuts.
  • Fold or roll up the crepes and serve immediately.
