Jammu rajma, a variety of kidney beans native to the Jammu region of India, offers numerous health benefits. When preparing Jammu rajma, ensure to soak them in water overnight or for at least 8 hours to soften and reduce cooking time. Before cooking, rinse the beans thoroughly and discard any debris. When boiling, use enough water to cover the beans by a few inches and add a pinch of salt to enhance flavor. Simmer gently, stirring occasionally, until the beans are tender but not mushy, typically around 1.5 to 2 hours. Be cautious not to overcook, as this can lead to a mushy texture.
