It's Gudi Padwa, and we couldn’t be happier. This day brings hope for a better tomorrow. Celebrating this day with your friends and family is the biggest luxury you can have. Now, when we talk about Gudi Padwa, our mind instantly says Puran Poli. 

Isn’t that right?

Well, this Gudi Padwa, let’s focus on a healthier way to celebrate. Puran Poli is a special flatbread filled with a sweet filling. In Marathi, the sweet stuffing is called Puran, and the bread is called Poli. You can find different versions of this tasty flatbread in Western and Southern India. One thing that stays the same is topping the warm Puran Polis with a generous amount of A2 ghee, which makes them extra special.

Try this Puran Poli recipe, which is extremely nutritious and delicious. 

Serves: 6

Preparation time: 30 minutes

Method

To make the Puran:

  1. Rinse the soaked chana dal/split Bengal gram. Once done, pressure cook for 7 whistles.
  2. Heat ghee in a pan. Add nutmeg powder, cardamom powder, and fennel powder, and sauté for a few seconds till it releases an aroma.
  3. Add in the cooked chana dal and organic jaggery. Stir this on a low flame until the mixture is completely dry. Turn off the heat once done.
  4. Let it cool. Mash the Puran well and keep it aside.

Preparing the Poli (roti):

  1. Take a medium-sized ball from the dough prepared. Roll it to 3 inches in circumference.
  2. Place the Puran mixture in the centre.
  3. Bring the edges together and join them.
  4. Sprinkle some flour and start rolling the dough till a medium size poli is made.
  5. On a heated tava, spread some ghee and place the poli, face down.
  6. Once brown, flip it over and cook the other side by applying ghee.
  7. Ensure it doesn’t burn. A good sign of a well-made Puran poli is that it will puff up.
  8. Serve hot with a little ghee.

Notes:

  • Soaking chana dal for 12 to 14 hours releases the phytic acid and makes it easier to digest.
  • Cardamom is an excellent spice to relieve digestive issues. Nutmeg is a natural immunity booster, and fennel powder has anti-inflammatory properties.
  • Organic jaggery is loaded with antioxidants and minerals.
  • Ragi plus sattu mix provides a different nutritional profile, rich in calcium, protein, iron and dietary fiber.
