Secondly, if you're planning to sprout the moong, ensure they are soaked in water for an adequate amount of time (usually overnight) and then drained and rinsed regularly during the sprouting process to prevent spoilage. When cooking whole moong, use a sufficient amount of water or broth to cover the beans and simmer gently until they are tender but still hold their shape.
